Chickpea Sunflower Salad Sandwich

 

Have you all watched Seaspiracy yet? If you haven’t already, please check it out on Netflix. If you have, kudos to you! Now is time to take action and stop eating our oceans. This recipe is the perfect tuna salad replacement. Perfect to eat it by itself, with tostadas or as a sandwich and so easy and inexpensive to make. 

Here’s the recipe 👇🏼

Ingredients:

1 can of Chickpeas, washed and drained

2 stalks of Celery, diced

⅓ cup of Sunflower Seeds

¼ cup of Red Onion, diced

1 medium Tomato, diced

1 Tbsp Hummus, your choice of flavor. I used Edamame Hummus from @lantanafoods

½ Lemon, juice 

2 Slices of Toast 

Handful of Spinach

½ Avocado 

Salt to taste

 

Preparation: 

  1. Drain, wash and drain again chickpeas. Transfer to a bowl and smash them completely. 
  2. Add the celery, onion, tomato, sunflower seeds, hummus and lemon juice. Combine all ingredients and add salt to taste. 
  3. Toast your slices of bread with plant-butter (optional), lay a bed of spinach on one side and avocado on the other. Add as much salad as you desire, bring toasts together and enjoy. 

 

> You can also serve the salad by itself with crackers on the side or serve over tostadas. 

> For a spicy hint add jalapeños or a pepper hummus instead.
