Corned Beef Rice and Mixed Veggies, Tangerines, Blueberries and Avocado slices
Here is the corned beef rice recipe:
What you need:
2 cups long grain rice
4 oz corned beef
1/2 of a small onion
2 tbsp tomato paste
2 tbsp olive oil
2 cups stock
1 cup frozen mixed veggies
💚What to do:
1. Sauté diced onions in olive oil for a few minutes, then add tomato paste. Stir gently, cook for a few more minutes.
2. Add stock, corned beef, and spices. (Corned beef is salty and you may not need to add salt). Bring mixture to boil.
3. Rinse rice and add, gently stir and reduce heat to low. Cook for 15mins.
4. Add the frozen mixed veggies and combine well. Turn off heat and keep covered for a few minutes. The heat will cook the vegetables to a perfect consistency.
5. Serve warm.
