Vibrant Veggie Stir-Fry with Brown Rice

Ingredients

For the stir-fry:

  • 1 cup chopped broccoli
  • 1 cup sliced bell peppers (mixed colors)
  • 1/2 cup julienned carrots
  • 1/2 cup snap peas
  • 1 tbsp sesame oil (or olive oil)
  • 1 tsp ginger, finely chopped
  • 1 garlic clove, minced
  • 2 tbsp soy sauce (or tamari for gluten-free)
  • 1 tsp rice vinegar (optional)
  • 1/2 tsp chili flakes (optional for spice)

For the base:

  • 1 cup cooked brown rice

For topping:

  • Toasted sesame seeds
  • Spring onions (optional)

Instructions

  1. Cook the rice:
    Prepare brown rice as per package instructions. Set aside and let it cool slightly.
  2. Stir-fry the veggies:
    Heat oil in a large pan or wok over medium heat. Add ginger and garlic, sauté for 30 seconds. Add broccoli, carrots, bell peppers, and snap peas. Stir-fry for 4–5 minutes until veggies are tender but still crisp.
  3. Add sauce:
    Stir in soy sauce, rice vinegar, and chili flakes. Mix well to coat the veggies. Cook for another 1–2 minutes.
  4. Assemble in a lunchbox:
    In the largest compartment, add a scoop of brown rice. In the others, divide the veggie stir-fry, a few sliced fruits, and a small sweet or snack. Garnish stir-fry with sesame seeds and spring onions.
